  • 4 lb chicken cut into pieces
  • 1 cup red wine Burgundy or Pinot Noir
  • 2 cup chicken broth
  • 2 tbsp olive oil
  • 3 tbsp flour
  • 2 tbsp butter
  • 1 slice bacon cut into strips
  • 6 piece shallot peeled
  • 8 oz mushrooms sliced
  • 2 clove garlic minced
  • 1 tsp thyme
  • 2 tbsp tomato paste
  • 1 tsp salt
  • 1 tsp black pepper freshly ground

Method
 

Preparation Steps
  1. Season the chicken pieces with salt and pepper. Dredge them in flour.
  2. In a large pot, heat the olive oil and butter over medium-high heat. Add the chicken and brown on all sides. Remove and set aside.
  3. In the same pot, add the bacon and cook until crisp. Add shallots, mushrooms, and garlic. Cook until the vegetables are softened.
  4. Stir in the tomato paste, thyme, and return the chicken to the pot. Add the wine and chicken broth, ensuring the chicken is covered.
  5. Bring to a boil, then reduce to a simmer. Cover and cook for 2 hours, or until the chicken is tender.
  6. Adjust seasoning with salt and pepper if necessary. Serve hot.

Notes

Serve with mashed potatoes, noodles, or crusty bread to soak up the sauce.
