Preparation Steps
- Season the chicken pieces with salt and pepper. Dredge them in flour.
- In a large pot, heat the olive oil and butter over medium-high heat. Add the chicken and brown on all sides. Remove and set aside.
- In the same pot, add the bacon and cook until crisp. Add shallots, mushrooms, and garlic. Cook until the vegetables are softened.
- Stir in the tomato paste, thyme, and return the chicken to the pot. Add the wine and chicken broth, ensuring the chicken is covered.
- Bring to a boil, then reduce to a simmer. Cover and cook for 2 hours, or until the chicken is tender.
- Adjust seasoning with salt and pepper if necessary. Serve hot.
