  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon salt or to taste
  • 0.5 teaspoon black pepper freshly ground

Method
 

Preparation Steps
  1. Grate the cauliflower using a food processor or a box grater until it resembles couscous.
  2. In a large bowl, combine the grated cauliflower, cherry tomatoes, cucumber, red onion, parsley, and mint.
  3. In a small bowl, whisk together the olive oil and lemon juice with the salt and black pepper.
  4. Pour the dressing over the salad and toss well to combine. Adjust seasoning if necessary.
  5. Serve immediately or chill in the refrigerator before serving for enhanced flavors.
