  • 1 cup couscous alternatively use bulgur
  • 1.5 cups water boiling
  • 1.5 cups cherry tomatoes chopped
  • 1 cup cucumber diced
  • 0.5 cup fresh parsley finely chopped
  • 0.25 cup fresh mint finely chopped
  • 0.25 cup olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper freshly ground

Method
 

Preparation Steps
  1. In a large bowl, pour the boiling water over the couscous. Cover and let it sit for 10 minutes.
  2. Fluff the couscous with a fork to separate the grains.
  3. Add the chopped cherry tomatoes, cucumber, parsley, and mint to the couscous.
  4. Drizzle with olive oil and lemon juice. Sprinkle with salt and pepper.
  5. Mix well and serve chilled or at room temperature.

Notes

For a more colorful taboulé, add diced bell peppers or radishes.
