Preparation Steps
- In a large bowl, pour the boiling water over the couscous. Cover and let it sit for 10 minutes.
- Fluff the couscous with a fork to separate the grains.
- Add the chopped cherry tomatoes, cucumber, parsley, and mint to the couscous.
- Drizzle with olive oil and lemon juice. Sprinkle with salt and pepper.
- Mix well and serve chilled or at room temperature.
Notes
For a more colorful taboulé, add diced bell peppers or radishes.
