  • 1 9-inch pie crust pre-made or homemade
  • 2 cups zucchini sliced
  • 1 cup cherry tomatoes halved
  • 1 cup red bell pepper diced
  • 1 cup grated Parmesan cheese
  • 3 large eggs beaten
  • 1 cup milk whole or 2%
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper freshly ground
  • 1 tablespoon olive oil

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté zucchini and red bell pepper until softened, about 5 minutes.
  3. Arrange the pie crust in a 9-inch tart pan and prick the bottom with a fork.
  4. In a bowl, whisk together eggs, milk, salt, and pepper. Mix in the sautéed vegetables and half of the Parmesan cheese.
  5. Pour the mixture into the tart crust. Top with remaining Parmesan cheese and cherry tomatoes.
  6. Bake for 35-40 minutes until the filling is set and the top is golden brown.
  7. Allow the tart to cool for 10 minutes before slicing and serving.
