  • 1 cup unsalted butter cold and diced
  • 0.5 teaspoon salt
  • 0.25 cup granulated sugar
  • 6 tablespoons ice water plus more if needed
  • 1.5 pounds plums pitted and sliced
  • 2 tablespoons cornstarch
  • 0.5 cup brown sugar packed
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice freshly squeezed
  • 2 tablespoons milk for brushing

Preparation Steps
  1. In a large bowl, combine the flour, salt, and sugar. Add the butter and mix until the mixture resembles coarse crumbs.
  2. Slowly add the ice water, mixing until the dough comes together. Form into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C). In a separate bowl, mix the sliced plums with the cornstarch, brown sugar, vanilla extract, and lemon juice.
  4. Roll out the dough on a floured surface and place it on a parchment-lined baking sheet. Arrange the plum mixture in the center, leaving a border.
  5. Fold the edges of the dough over the plums. Brush the crust with milk. Bake for 45 minutes or until golden brown.

Notes

Serve with whipped cream or vanilla ice cream if desired.
