Preparation Steps
- In a bowl, mix the flour and sugar. Add the chilled butter and rub until the mixture resembles breadcrumbs.
- Slowly add ice water and mix until the dough forms. Shape into a ball, wrap in plastic, and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface and line a tart pan.
- In a bowl, mix the plums, cinnamon, cornstarch, vanilla extract, and lemon juice. Place the mixture into the prepared crust.
- Create a lattice over the fruit with remaining dough, brushing with beaten egg if desired.
- Bake for 45 minutes or until the crust is golden brown and the filling bubbly. Cool before serving.
