  • 1.5 cups all-purpose flour for the crust
  • 0.5 cup unsalted butter chilled and cubed
  • 0.25 cup granulated sugar
  • 0.25 cup ice water more or less as needed
  • 2 pounds ripe plums pitted and sliced
  • 0.5 teaspoon ground cinnamon
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice freshly squeezed

Method
 

Preparation Steps
  1. In a bowl, mix the flour and sugar. Add the chilled butter and rub until the mixture resembles breadcrumbs.
  2. Slowly add ice water and mix until the dough forms. Shape into a ball, wrap in plastic, and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface and line a tart pan.
  4. In a bowl, mix the plums, cinnamon, cornstarch, vanilla extract, and lemon juice. Place the mixture into the prepared crust.
  5. Create a lattice over the fruit with remaining dough, brushing with beaten egg if desired.
  6. Bake for 45 minutes or until the crust is golden brown and the filling bubbly. Cool before serving.
