- Preheat oven to 400°F (200°C).
- In a bowl, combine flour and salt. Add the cold butter and mix until it resembles coarse crumbs.
- Gradually add ice water until dough comes together. Wrap and chill for 30 minutes.
- On a baking sheet, toss sliced peppers with olive oil. Roast for 20 minutes.
- Roll out dough on a floured surface. Transfer to a parchment-lined baking sheet.
- Layer the roasted peppers and crumbled goat cheese over the crust, leaving a border.
- Sprinkle thyme and pepper, then fold edges over the filling.
- Bake for 40 minutes or until the crust is golden. Drizzle with honey before serving.
