  • 2 cups all-purpose flour for the crust
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter cold and cubed
  • 4 tablespoons ice water more if needed
  • 3 bell peppers red, yellow, and orange, sliced
  • 2 tablespoons olive oil
  • 8 ounces goat cheese softened
  • 1 teaspoon thyme fresh, chopped
  • 0.25 teaspoon black pepper freshly ground
  • 2 tablespoons honey for drizzling

Method
 

Preparation Steps
  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine flour and salt. Add the cold butter and mix until it resembles coarse crumbs.
  3. Gradually add ice water until dough comes together. Wrap and chill for 30 minutes.
  4. On a baking sheet, toss sliced peppers with olive oil. Roast for 20 minutes.
  5. Roll out dough on a floured surface. Transfer to a parchment-lined baking sheet.
  6. Layer the roasted peppers and crumbled goat cheese over the crust, leaving a border.
  7. Sprinkle thyme and pepper, then fold edges over the filling.
  8. Bake for 40 minutes or until the crust is golden. Drizzle with honey before serving.

Serve warm with a side salad for a complete meal.
