  • 1 pound puff pastry thawed if frozen
  • 2 cups ripe tomatoes sliced
  • 8 ounces goat cheese crumbled
  • 2 tablespoons honey
  • 1 teaspoon olive oil
  • 1 teaspoon fresh thyme chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Method
 

Preparation Steps
  1. Preheat oven to 400°F (200°C). Roll out the puff pastry on a baking sheet lined with parchment paper.
  2. Arrange the tomato slices over the puff pastry, leaving a small border around the edges.
  3. Sprinkle the crumbled goat cheese evenly over the tomatoes.
  4. Drizzle the honey and olive oil on top of the cheese and tomatoes.
  5. Sprinkle the chopped thyme, salt, and black pepper over the tart.
  6. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and crispy.
  7. Remove from the oven and let it cool slightly before serving.

Notes

For an extra touch, serve with a light salad on the side.
