Preparation Steps
- Preheat oven to 400°F (200°C). Roll out the puff pastry on a baking sheet lined with parchment paper.
- Arrange the tomato slices over the puff pastry, leaving a small border around the edges.
- Sprinkle the crumbled goat cheese evenly over the tomatoes.
- Drizzle the honey and olive oil on top of the cheese and tomatoes.
- Sprinkle the chopped thyme, salt, and black pepper over the tart.
- Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and crispy.
- Remove from the oven and let it cool slightly before serving.

For an extra touch, serve with a light salad on the side.
