Ingredients
  

Main Ingredients
  • 8 oz mascarpone cheese
  • 3 tbsp granulated sugar
  • 1 cup heavy cream cold
  • 1 tsp vanilla extract
  • 20 pieces ladyfinger biscuits
  • 1 cup strong brewed coffee cooled
  • 2 tbsp cocoa powder unsweetened
  • 0.5 cup cherry compote or cherry pie filling
  • 2 tbsp dark chocolate shavings

Method
 

Preparation Steps
  1. In a large bowl, beat the mascarpone cheese with sugar until smooth.
  2. In a separate bowl, whip the heavy cream with vanilla extract until stiff peaks form.
  3. Gently fold the whipped cream into the mascarpone mixture.
  4. Briefly dip each ladyfinger into the coffee and layer them in a serving dish.
  5. Spread half of the mascarpone mixture over the ladyfingers.
  6. Add a layer of cherry compote, then repeat with another layer of coffee-dipped ladyfingers and mascarpone mixture.
  7. Dust with cocoa powder and sprinkle dark chocolate shavings on top.
  8. Refrigerate for at least 2 hours before serving.

Notes

For an extra touch, garnish with fresh cherries before serving.
