Meatloaf in a muffin pan is a nice recipe, more standard than an average meatloaf, made from olive oil, onion, garlic, ground beef chuck, breadcrumbs, worcestershire sauce, and other ingredients

Meatloaf muffins are standard meatloaf. They are very simple and easy to make, you do not need to go through a long process to make this recipe, you only need to bake the meatloaf mixture in muffin tins and you are good to go. My kids love this recipe because it resonates with them.

This recipe is perfect for dinner when you’re short on time. Adding egg and ketchup to the meat mixture gives it a moist meatloaf taste. You can finish the recipe off with a bit of more ketchup halfway through the baking process to create a delicious glaze. You can be creative with this recipe and add other ingredients into it like carrot and other vegetables in the meat mixture.

Cooking spray, or melted butter, for greasing pan

1 tablespoon extra-virgin olive oil

½ cup finely chopped onion

1 medium clove garlic, finely minced

1 ½ pounds ground beef chuck

1 cup ketchup, divided

1/2 cup soft fine breadcrumbs

1 large egg, beaten

1 teaspoon Worcestershire sauce

¾ teaspoon kosher salt

½ teaspoon freshly ground black pepper

½ teaspoon dried oregano

½ teaspoon dried thyme

How to prepare

Step 1:

Heat the oven to 350 degrees Fahrenheit. Then spray the muffin pan slightly with nonstick cooking spray or grease with melted butter.

Step 2:

Heat the olive oil over medium heat in a medium skillet and add the onion to the pan and sauté for about 3 minutes or until it is lightly browned and tender.

Step 3:

Add in the finely minced garlic and allow to cook, stirring, for 1 minute longer. Then combine the ground beef with ½ cup of ketchup, breadcrumbs, beaten egg, Worcestershire sauce, salt, black pepper, oregano, and thyme in a small bowl.

Step 4:

Add the sautéed vegetables and mix until blended and pack the meat mixture into the prepared muffin cups. Allow to bake for about 20 minutes.

Step 5:

Top each meatloaf muffin with about a tablespoon of the remaining ketchup. Return the muffins to the oven and bake again for about 5 to 10 minutes longer.

Step 6:

Allow to cook until the thermometer reads at least 160 degree Fahreneheit when inserted into the center of the muffin.

Tips and variations

To ensure your muffins stay together, you should chop the onion and garlic as finely as possible.

If the muffin cups are overfilled, place a rimmed baking pan or sheet of foil under the muffin tin to catch any overflow.

You can add some other finely minced veggies to the mix, like ½ cup carrots or bell peppers.

You can also add ¼ cup of freshly grated Parmesan or Romano cheese to the mixture.

You can substitute ketchup with chili sauce to top the muffins.
